Origin
The story
The Gibson was codified in early-20th-century San Francisco and New York. Most accounts credit illustrator Charles Dana Gibson, though origins remain disputed. The defining tell is the pickled cocktail onion in place of the Martini's olive or lemon; the savoury brine reframes the drink without changing the build. We pour Saxzi One gin.
