Tom Collins, made with Saxzi One gin and a touch of mastiha from Chios, finished with an orange peel.

- 5 ml mastiha liqueur
- 15 ml simple syrup
- 15 ml fresh lemon juice
- 1 orange peel (in the shaker)
- 50 to 60 ml chilled soda water, to top
- Orange peel, to garnish

How to
Pour your Saxzi Collins
- Add Saxzi One gin, mastiha, simple syrup, lemon juice and an orange peel to a shaker with ice.
- Shake hard for about 8 seconds.
- Strain over fresh ice into a Collins glass.
- Top with 50 to 60 ml of chilled soda water.
- Garnish with a fresh orange peel, expressing the oils over the surface first.

The story
A touch of mastiha from Chios, the resin Greeks have flavoured aperitifs with for centuries. The orange peel is a small deviation from the canonical recipe that reads Mediterranean.
